They are hard to describe, and I know that this may not directly be your fault, but you may know the devs to tell them of glitches... unless it is somehow my OS or Java issue... I am running Ubuntu 13.04 with OpenJDK 7. I will test later with Oracle Java 7. Here are some screenshots of my bugs:

and whenever the chests DO work, the signs dissapear, but the words are still there.

Edit: So Oracle Java 7 doesn't even want to start executing Minecraft... Issues...

for the life of me I cant make Oracle java 7 run Minecraft in this... at all... it runs launchers but no game

Well that took me for a loophole. After installing Oracle java7, No javas would work. Then i somehow broke the package and had dpkg fix it. Before that I had to uninstall ALL java's, and use Synaptics to complete remove all leftover files. Warning to all, avoid Oracle Java 7 on Ubuntu 13.04 at all costs, it WILL cause you issues.

I don't think it's related to Java or Ubuntu. I guess it's the graphic card or the drivers(I don't have issues with my nvidia card). And if you want to use the Oracle JRE 7 you have to update the LWJGL.

I'm not expert. But if I saw the first 2 screenshots without any explanation, I would suggest that it's optifines fault, since those visual artifacts look like something optifine. But then again, I have no idea :D

Maybe but I don't think so. I have the most common graphics card in the world. I have an i5 core processor that comes with Intel graphics 3000. Ubuntu supports that card way more than a lot of cards.,

And I'll try disabling optifine, but I'm still going to stay far away from oracle java 7. I will update lwjgl though.
