Recently, the server has had a number of lag issues, but we're working to get them resolved as soon as possible (possibly by finding a new host).

I'd suggest ProvisionHost. I had no lag with them (dedicated 100mbps link) and their plans are customizable. However they are a tad expensive IMO (being the reason I stopped having a server with them).
Just heard how much you pay for the server now, and yes, they do seem excessively expensive. But when a 128MB VPS in Australia costs $30/month they seemed like a good deal
